Adobong Manok (Chicken Adobo)
ingredients
- 2 1/2 - 3 lbs. Chicken breast, cut in bite-size pieces
- 1/4 cup water
- 1/3 cup Soy Sauce
- 1/4 cup Vinegar, white or rice
- 1 complete Garlic bulb, finely chopped
- 1/2 inch Ginger, peeled and minced
- 1 Onion, white or yellow, cut in eighths
- 2 medium Potatoes, peeled and cubed
- 1/4 tsp. Salt
- 5-10 Black Peppercorns, whole
- 2-3 dried Bay Leaves, whole

Peel and cube potatoes and chop onions, ginger, and garlic. Brown the chicken in oil in a large frying pan, with the garlic, ginger, potatoes and onions. Drain off some or all of the oil, then add.the water, soy sauce, and vinegar to the pan, along with the salt, peppercorns and bay leaves. Bring the mixture to a boil. Cover and let simmer about an hour or until chicken is tender.

If the sauce ends up too tangy for your tastes, simply add more water and some sugar. This should dilute the taste to something more palateable.
