Crunchy Asian Beef Slaw
ingredients
- 3 tbsp seasoned rice vinegar
- 1 tbsp reduced-sodium soy sauce
- 1 tbsp packed brown sugar
- 2 (8- or 10-oz) bags shredded red cabbage
- 1/4 c chopped fresh mint
- 1 (8-oz) container deli-sliced roast beef, cut into strips
- 2 tbsp unsalted dry-roasted peanuts

1. To make the dressing, combine the vinegar, soy sauce, and brown sugar in a small bowl.

2. Combine the cabbage and mint in a large bowl. Add half the dressing and toss to coat. Top with the beef and drizzle with the remaining dressing. Sprinkle with the peanuts and serve at once.
