Thai Tuna Salad
ingredients
- 1 lime, halved
- 2 (6-oz) cans solid white tuna in water, drained and flaked
- 1 (3/4-lb) ripe papaya, peeled, seeded and cut into 2-in thick strips
- 1/4 c canned pickled red jalapeño wheels, drained and chopped
- 1/4 c dry-roasted peanuts, coarsely chopped
- 1/4 c fresh basil leaves, chopped
- 2 scallions, thinly sliced

1. Squeeze the juice from half the lime; cut the remaining half into 4 wedges.

2. Combine the tuna, papaya, jalapeño wheels, peanuts, basil, scallions, and lime juice in a medium bowl; toss gently to combine. Serve at once with the lime wedges.
