Mom's Thanksgiving Sweet Potatoes
6 medium-size sweet potatoes
1½ to 2 cups thinly-sliced apples
½ cup, or more, brown sugar
dash cinnamon
(2 tbs chopped pecans) optional
¼ cup butter
½ cup apple juice
I use fresh yams and Granny Smith apples. And if I don’t have the apple juice, I just use water. And I put the cinnamon in til it smells good.
Boil potatoes til almost done. Peel and slice ½" thick.
Peel and slice apples and cook in small amount of water.
Grease baking dish and alternate apples and potatoes - sprinkle with sugar, cinnamon, and pecans. Dot with ¼ cup butter. Pour apple juice over top.
Bake about 30 minutes
