Jackie's Tortilla Soup
We took a great recipe for this family favorite and made it a little chunkier.
ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14-1/2 oz.) can Mexican-style tomatoes
- 4 c. chicken stock
- 1 can tomato soup
- 1 t. cumin
- 1 t. chili powder
- salt and pepper to taste
- 1/2 t. lemon pepper
- 2 t. Worcestershire sauce
- 1 c. whole kernel corn
- 2 poached chicken breasts
- 4 corn tortillas
- 1 avocado
- grated cheese
directions
Saute’ onion, garlic and tomatoes for several minutes. Add remaining ingredients except tortillas, avocado and cheese. Simmer 1 hour. About 10 minutes before serving, tear tortillas into bite-sized pieces and add to soup. Serve with avocado and cheese as toppings.
