Mexican Omelette Souffle

This is how Lauren spells “comfort food.” But, we have all come to love this Christmas morning tradition.

  • Remove crusts from bread. Cut into cubes. Put cubes and cheese into greased 9 x 12" casserole. Layer meat on top. Beat eggs. Add milk, salt and chiles. Pour over casserole. Refrigerate overnight.

  • Preheat oven to 350. Place jellyroll pan partially filled with water in oven. Set casserole dish in pan. Bake 35 minutes or until puffy and brown.
