Mexican Omelette Souffle
This is how Lauren spells “comfort food.” But, we have all come to love this Christmas morning tradition.
ingredients
- 10 slices white bread
- 1/2 lb. grated Cheddar cheese
- 1 lb. bacon, ham or sausage, cooked and diced
- 6 eggs
- 3 c. milk
- 1/2 t. salt
- 4-6 chopped green chiles

Remove crusts from bread. Cut into cubes. Put cubes and cheese into greased 9 x 12" casserole. Layer meat on top. Beat eggs. Add milk, salt and chiles. Pour over casserole. Refrigerate overnight.

Preheat oven to 350. Place jellyroll pan partially filled with water in oven. Set casserole dish in pan. Bake 35 minutes or until puffy and brown.
