Gee's Potato Salad

It wouldn’t be Christmas Eve without this standard family favorite! Gee always spends the morning making her Aunt Jamie’s famous recipe, and Daddo likes it warm, freshly made!

ingredients

  • 8-10 med-sized new potatoes
  • 4 hard boiled eggs, peeled
  • 5 strips of bacon, cooked crisp
  • 3/4 c. chopped celery
  • 1/2 c. sliced green onions
  • 1/4 c. chopped parsley
  • 1 lg. jar diced pimientos
  • 1/2 c. diced sour pickles (with juice)
  • 1 T. yellow mustard
  • 1 c. mayonaisse

directions

Wash and boil potatoes until fork tender (30 minutes). Peel potatoes and eggs while warm and cut up into large bowl. Crumble bacon and add to potatoes, sprinkling some of the bacon grease on the mixture. Add remaining ingredients and mix well. Splash with pickle juice and add salt and pepper to taste.
