Mushroom and Tofu Stir-Fry
3 tsp Asian (dark) sesame oil
1 (14-oz) package light firm tofu, drained and cubed
2 (4-oz) packages sliced fresh exotic mushrooms
4 scallions, chopped
¼ c hoisin sauce
1. Heat a large nonstick skillet or wok over medium-high heat until a drop of water sizzles on it. Add 1 teaspoon of the sesame oil and swirl to coat the pan. Add the tofu and stir-fry until lightly golden, 5-6 minutes. Transfer to a bowl.
2. Heat the remaining 2 teaspoons sesame oil in the skillet. Add the mushrooms and stir-fry until lightly browned, 5-6 minutes. Add the tofu and stir-fry until hot, about 1 minute. Add the scallions and stir-fry just until wilted, about 30 seconds. Add the hoisin sauce and cook, stirring constantly, just until blended, about 10 seconds longer. Serve at once.
