Spicy Tuna Rolls
Spicy Tuna is an American sushi staple. For a light lunch, have this roll with a simple salad tossed in Asian style vinaigrette topped with a few wasabi pea “croutons”.
ingredients
- For the Spicy tuna mix
- 1/2 lb sashimi grade tuna, minced
- 1 teaspoon toasted sesame seeds
- 1 teaspoon sesame oil
- 1 tablespoon scallions, finely cut
- 1 1/2 tablespoon mayo
- 1/4 teaspoon Japanese 7 spice powder, or cayenne pepper
- orange zest, about 1/2 teaspoon
- For the rolls
- 4-5 sheets of nori (4in x 7in)
- 3-3 1/2 cup prepared basic sushi rice
- 4-5 cucumber sticks, French fry sized
- 4-5 avocado wedges, about 1/4 inch thick

To assemble each roll, begin by spreading about 3/4 cup sushi rice vertically on nori using the thick sushi roll technique. In the center of each the rice, place 1 cucumber stick, 1 wedge of avocado and 3 Tbsp of the spicy tuna mix.

Roll according to the method for rolling thick rolls. Let roll rest seam side down for 2 minutes before cutting into 5 pieces.

Repeat until all spicy tuna mixture has been used.
