Spicy Tuna Rolls

Spicy Tuna is an American sushi staple. For a light lunch, have this roll with a simple salad tossed in Asian style vinaigrette topped with a few wasabi pea “croutons”.

  • For the Spicy tuna mix

  • 1⁄2 lb sashimi grade tuna, minced

  • 1 teaspoon toasted sesame seeds

  • 1 teaspoon sesame oil

  • 1 tablespoon scallions, finely cut

  • 1 1⁄2 tablespoon mayo

  • 1⁄4 teaspoon Japanese 7 spice powder, or cayenne pepper

  • orange zest, about 1⁄2 teaspoon

  • For the rolls

  • 4-5 sheets of nori (4in x 7in)

  • 3-3½ cup prepared basic sushi rice

  • 4-5 cucumber sticks, French fry sized

  • 4-5 avocado wedges, about ¼ inch thick

  • To assemble each roll, begin by spreading about ¾ cup sushi rice vertically on nori using the thick sushi roll technique. In the center of each the rice, place 1 cucumber stick, 1 wedge of avocado and 3 Tbsp of the spicy tuna mix.

  • Roll according to the method for rolling thick rolls. Let roll rest seam side down for 2 minutes before cutting into 5 pieces.

  • Repeat until all spicy tuna mixture has been used.
