Best Banana Bread Muffins (for all your road trips)
Believe me, I have tried many banana bread recipes, and this one is the best. Seriously, Dean is addicted. And it is freakin’ healthy as far as bread is concerned. Perfect for those road trips I know you guys love to take! -Amy Davison
ingredients
- Combine in one bowl:
- 1 lb/about 4 mashed bananas (freeze them when they get soft and save them for this!)
- 3 Tbl buttermilk or yogurt
- 1/4 c. honey or sucanat/brown sugar
- 1/4 c. safflower oil or 1/3 c. applesauce
- 1/2 Tbl vanilla extract
- a little bit of grated orange or lemon rind, if you like
- Whisk together in another bowl:
- 2 c. whole wheet pasty flour (or substitute 1 cup for an equal amount of wheat bran or oats)
- 2 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/4 tsp nutmeg

Add the dry to the wet and mix til just combined. *Add blueberries, raisins, chocolate chips or nuts if you like.

Spoon into lightly oiled muffin tins. Bake at 350° for 15-20 minutes.
