Margaret's Banana Nut Bread

Most people don’t think Margaret Davis can cook. She surprises us sometimes with this easy bread. Delicious.

  • 1 stick Margarine

  • 1 cup Sugar

  • 2 eggs

  • 1½ (plus) cups Mashed ripe bananas

  • 2 cups Flour

  • 1 T. Baking soda

  • Preheat oven to 350 degrees.

  • Cream margarine and sugar with mixer until light and fluffy.

  • Add eggs - one at a time, beating well.

  • Mix in bananas.

  • Combine flour and baking soda.

  • Add to creamed mixture.

  • Spoon into a well-greased loaf pan.

  • Bake at 350 degrees for 40 to 50 minutes, or until a wooden toothpick comes out clean.
