German Oatmeal Cake

ingredients

  • 1 cup oatmeal (uncooked)
  • 1 1/2 cups hot water
  • 1/2 cups shortening
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 1/3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

    Preheat oven to 350 °F. Grease well and flour 8x12 pan. Pour hot water over the oatmeal and set aside. Cream shortening and sugars. Add eggs, mixing well. Sift flour, baking

    soda, salt and cinnamon. Stir well. Add the oatmeal and water mixture. Pour into pan and bake about an hour. When done, spread on topping (see below) and place cake in broiler

    until brown, only a few minutes.

    3/4 cup brown sugar

    3/4 stick of butter (six tablespoons) – melted

    2 tablespoons milk

    Boil these ingredients for 1 minute then add 1 cup coconut and 1 cup of

    pecans, chopped.
