These cookies are packed with great stuff. They are really sweet without much sugar. It looks like Stephen, John and Brooks had a few to many of these cookies.

ingredients

  • 1 1/2 cups spelt flour
  • 1/2 cup turbinado sugar
  • 1/8 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 cup nuts (omit these if Lauren is eating them.)
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup raw sunflower seeds
  • 1/4 cup organic cranberries
  • 1/4 cup organic raisins
  • 2 tablespoons vegetable or canola oil
  • 1 tablespoon honey
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 2 tablespoons organic butter, softened

directions

Preheat oven to 350 degrees. Combine spelt flour, sugar, cinnamon, baking powder and kosher salt. Add in nuts, if desired, pumpkin seeds, sunflower seeds, cranberries and raisins. In a separate bowl, whisk oil, egg, honey and vanilla together. Combine the wet ingredients with the dry ingredients to form a batter. Work softened butter into the batter with your hands or a fork. Spray a cookie sheet with cooking spray and drop by heaping tablespoons of batter on the sheet. Flatten lightly with a fork. Bake for 20 to 25 minutes or until lightly brown on the edges.
