Quick Pickles

Italian Herb and Garlic Pickles

Brine
  • 1 cup distilled white vinegar

  • 5 cups water

  • ½ cup sugar

  • ⅓ cup Kosher salt

  • 6 - 8 small pickling cucumbers

  • 3 clean one pint jars with lids

Italian Herb and Garlic Seasoning
  • 1 sprig each of basil, oregano, and rosemary

  • 1 clove of garlic crushed

  • To make brine, place vinegar, 5 cups of water sugar and salt in a saucepan, and bring to a boil. Add seasonings and let steep for 10 minutes.

  • In the mean time slice the cucumbers with the slicing blade of a food processor or by hand.

  • Fill jars about ¾ full with cucumbers and pour brine in jars to fill.

  • Cool and cover tightly. Refrigerate when cooled. Pickles will be ready in 24 hours

notes:

This is nice to have on hand for quick salads or to go with your favorite sandwich. These pickles are quick and easy to make, and taste great too.If you prefer, leave the pickles whole instead of slicing them so you can make pickle spears.
