Deep Fried Cauliflower
1 head of cauliflower
pancake batter (Bisquick works well)
oil for frying
Clean cauliflower and steam until just tender
Cool and separate into bite sized florets.
Dip each floret into prepared pancake batter, letting excess drip off back into bowl.
Deep fry cauliflower pieces a few at a time in a counter top fryer or on the stove in a skillet, until nicely browned. Drain on paper towels. Sprinkle with salt and pepper .
Serve hot.

I don't get to see my dad often, but when I do I always try to cook things he likes to eat. This is one of his favorite ways to eat cauliflower. This also works well with other veggies like mushrooms, broccoli,and squash.
