Pumpkin Cookies

Soft cake like pumpkin cookies

  • Cream sugar and margarine. Add pumpkin and eggs. Beat well.

  • Add dry ingriedients to pumpkin mixture. Mix well.

  • Add chopped nuts and raisins.

  • Bake at 350 for 15 minutes on an ungreased cookie sheet.. Let cool for 5 minutes before removing from baking sheet.

  • Store in air tight container for 1 week.

I first made these for my oldest daughter when she was in 2nd grade. They have been a hit ever since! Both my girls love them, and my sister Laurele has even made them once or twice.
