Stuffed Chicken

ingredients

  • 1 lb. ground beef
  • 1 c raisins
  • 1 c pickle relish
  • 1 c grated cheese
  • 1 c ham
  • 1 c grated carrots
  • 1/4 c spanish chorizo
  • boiled chicken meat cut into small pieces
  • 2 tbsp salt
  • 1 tbsp pepper
  • 2 scrambled eggs mixed with 4 tbsp flour
  • 4 boiled eggs
  • 2 tbsp soy sauce
  • 1 tsp lemon juice

    Debone chicken by:

    -seperate the skin from meat using blunt end of knife

  • 3

    -seperate joints (wings from breast and legs from thigh) cut them apart

  • 4

    -remove whole meat, boil and cut

  • 5

    Marinate deboned chicken into soy sauce and lemon juice. Mix all first 10 ingredients and add the scrambled egg/flour mixture as binder. Sew one end of the chicken and stuff the above mixture in. Stuff boiled eggs to 4 corners. Sew other end of chicken and Bake 375 for 1-1 1/2 hours until golden brown.
