Easy Paella
seafood and chicken dish with garlic rice and vermicelli
ingredients
- 2 TBLSP Olive Oil
- 1 PKG Chix and Garlic flavored rice & vermicelli mix (Rice a Roni)
- 1/2 Cup Thinly sliced Red Pepper
- 1/2 Cup thinly sliced Vidalia Onion
- 1 14OZ Can Chicken Broth
- 3/4 Cup Water
- 1 Bay Leaf
- 1/2 Cup Bay Scallops (uncooked and rinsed)
- 1 Small can LeSueur Peas (drained)
- 3 Cooked Chicken Breasts cut into small pieces
- 1 Cup Peeled and deveined med size shrimp (uncooked)
- 1tsp chopped fresh garlic

In a 12 inch skillet heat oil on med high, add rice mix,peppers and onions. Cook 2-3 minutes stirring until rice starts to brown.

Stir in Chicken broth, water, bay leaf & seasoning mix pack from rice. Heat to boiling. Reduce heat to low. Cover and simmer for 5 minutes. Uncover. Remove bay leaf.

Spray a casserole dish with non stick spray for easy cleanup. Place rice & veggie mix in dish. Add drained peas, chicken,scallops and shrimp. Cover w/ lid or al.foil. Bake @ 375 for approx 20 minutes or until shrimp are pink and firm. Stir well before serving.
notes
This recipe can be made with just chicken or chicken and smoked sausage if you don't like seafood.
