Easy Paella

seafood and chicken dish with garlic rice and vermicelli

  • 2 TBLSP Olive Oil

  • 1 PKG Chix and Garlic flavored rice & vermicelli mix (Rice a Roni)

  • ½ Cup Thinly sliced Red Pepper

  • ½ Cup thinly sliced Vidalia Onion

  • 1 14OZ Can Chicken Broth

  • ¾ Cup Water

  • 1 Bay Leaf

  • ½ Cup Bay Scallops (uncooked and rinsed)

  • 1 Small can LeSueur Peas (drained)

  • 3 Cooked Chicken Breasts cut into small pieces

  • 1 Cup Peeled and deveined med size shrimp (uncooked)

  • 1tsp chopped fresh garlic

  • In a 12 inch skillet heat oil on med high, add rice mix,peppers and onions. Cook 2-3 minutes stirring until rice starts to brown.

  • Stir in Chicken broth, water, bay leaf & seasoning mix pack from rice. Heat to boiling. Reduce heat to low. Cover and simmer for 5 minutes. Uncover. Remove bay leaf.

  • Spray a casserole dish with non stick spray for easy cleanup. Place rice & veggie mix in dish. Add drained peas, chicken,scallops and shrimp. Cover w/ lid or al.foil. Bake @ 375 for approx 20 minutes or until shrimp are pink and firm. Stir well before serving.

notes:

This recipe can be made with just chicken or chicken and smoked sausage if you don't like seafood.
