seafood and chicken dish with garlic rice and vermicelli
2 TBLSP Olive Oil
1 PKG Chix and Garlic flavored rice & vermicelli mix (Rice a Roni)
½ Cup Thinly sliced Red Pepper
½ Cup thinly sliced Vidalia Onion
1 14OZ Can Chicken Broth
¾ Cup Water
1 Bay Leaf
½ Cup Bay Scallops (uncooked and rinsed)
1 Small can LeSueur Peas (drained)
3 Cooked Chicken Breasts cut into small pieces
1 Cup Peeled and deveined med size shrimp (uncooked)
1tsp chopped fresh garlic
In a 12 inch skillet heat oil on med high, add rice mix,peppers and onions. Cook 2-3 minutes stirring until rice starts to brown.
Stir in Chicken broth, water, bay leaf & seasoning mix pack from rice. Heat to boiling. Reduce heat to low. Cover and simmer for 5 minutes. Uncover. Remove bay leaf.
Spray a casserole dish with non stick spray for easy cleanup. Place rice & veggie mix in dish. Add drained peas, chicken,scallops and shrimp. Cover w/ lid or al.foil. Bake @ 375 for approx 20 minutes or until shrimp are pink and firm. Stir well before serving.
PREP TIME: 30 min
TOTAL TIME: 50 min
This recipe can be made with just chicken or chicken and smoked sausage if you don't like seafood.
