ingredients

Cake
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 2 cups grated raw carrots
  • 8 1/2 oz. can drained crushed pineapple
  • 1/2 cup chopped nuts
  • 2 cups sugar
  • 1 1/2 cups wesson oil
  • 4 eggs
  • 1/2 tsp salt
Icing
  • 1 cube butter (or margarine)
  • 8 oz. package cream cheese
  • 1 lb. box powdered sugar
  • 2 tsp vanilla
  • 1/2 tsp salt

    Cake:

    Sift flour, baking powder, soda, salt and cinnamon. Add sugar, oil, eggs. Mix well. Add carrots, pineapple and nuts. Grease and flour pyrex pan (13x9x2) and pour in batter. Bake at 325° oven for 45 minutes to 1 hour. Cool completely before icing.

    Icing:

    Cream butter and cream cheese. Add powdered sugar, vanilla and salt. Beat with mixer at high speed until real fluffy.
