Breakfast Tacos

A good use of leftover ingredients and a good reason to eat cheese in the morning!

  • Gather your ingredients. They can be anything you’d like to eat mixed with eggs & cheese!

  • We like roasted potatoes that we probably ate earlier in the week. Sausage or other meat is good. Vegetables like red bell peppers, mushrooms, asparagus and corn are all good. Black beans are excellent.

  • Ingredients should all be approximately the same size, so cut them accordingly.

  • Put them into your pan to saute with olive oil or butter.

  • Make sure your ingredients are all cooked and seasoned well before adding eggs. We like to use Laura’s Seasoning. Then add 2 eggs per person.

  • When the eggs are cooked, move pan off the burner.

  • Warm flour tortillas up and pour in egg mixture. Add salsa and cheese.

  • Other good things to add are : sour cream, avacados and tomatoes.
