Breakfast Tacos
A good use of leftover ingredients and a good reason to eat cheese in the morning!
Ingredients should all be approximately the same size, so cut them accordingly.
Put them into your pan to saute with olive oil or butter.
Make sure your ingredients are all cooked and seasoned well before adding eggs. We like to use Laura’s Seasoning. Then add 2 eggs per person.
When the eggs are cooked, move pan off the burner.
Warm flour tortillas up and pour in egg mixture. Add salsa and cheese.
Other good things to add are : sour cream, avacados and tomatoes.
