Jenny's California Toaster Sandwich

  • ½ cup of shredded, cooked chicken (leftover from a roast chicken or chicken breast)

  • ½ avocado sliced into thin pieces

  • ¼ cup of shredded cheddar cheese (or any cheese that you like)

  • A few very thin slices of red onion

  • 1 T mayonnaise

  • (optional) dijon or yellow mustard to taste

  • 2 slices of multigrain bread

  • (optional) sprouts (this makes it a truly Californian sandwich)

  • Preheat the toaster oven to 375 degrees. Spread both slices of bread with mayonnaise and mustard (if you like….I don’t!). Arrange the shredded chicken and sliced red onion on one piece of bread and the avocado slices on the other piece of bread. Top both slices with shredded cheddar cheese. Cook the sandwich in the toaster oven for about 7-10 minutes until the cheese is melted. Put the two bread slices together carefully an cut the sandwich on the diagonal. Sprouts can be added on top of the avocado half before assembling the sandwich. Serve with pickle wedges and crispy potato chips. Enjoy!
