Lemon & Basil Egg Bread
ingredients
- 1 large loaf French or Vienna bread
- 2 Tb olive oil
- 1 tsp lemon juice
- 3 eggs
- 1/4 C chopped basil
- 1/4 C Parmesan
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 C milk

Preheat over to 350*F.

In a large bowl, whisk together eggs, basil, cheese, salt, pepper, and milk. Set aside.

Cut the top off the bread and hollow out the inside. Tear the top and inside into pieces and save for egg mixture.

In a small bowl, mix together oil and lemon juice, then brush over the inside of the bread shell. Add 4 cups worth of the bread pieces (discard the rest) to the egg mixture and stir. Allow a minute or two for the liquid to soak into the bread, then stir again to turn to mush. Pour into the bread shell.

Bake for 30 minutes.
