Spicy Pickled Beans
ingredients
- 2 quarts water
- 1 tablespoon salt
- 1/2 pound green beans, trimmed
- 1/2 pound wax beans, trimmed
- 1 1/4 cups red wine vinegar
- 1/2 cup sherry or cider vinegar
- 1/2 cup vodka
- 2 tablespoons mustard seeds
- 1 tablespoon black peppercorns
- 2 teaspoons fennel seeds
- 1 to 2 teaspoons crushed red pepper
- 4 garlic cloves
- 4 fresh dill sprigs
- 2 bay leaves

1. Bring water and salt to a boil in a large sauce pan.

2. Add beans, cook 4 minutes until tender-crisp.

3. Drain, place in a large bowl.

4. Combine all other ingredients in a medium saucepan and boil about 1 min, or until sugar dissolves.

5. Pour over beans. Cover and marinate in refrigerator at least 24 hours.
