Chicken & Grape Macaroni Salad
Sounds weird, but it is very tasty. A different twist to the basic macaroni salad. Perfect for a summer brunch served with crusty bread.
Cook macaroni, drain and cool. Boil chicken breast in stock, add salt pepper and parsley. Cool and rip or cut into bite size pieces. Cut grape in quarters. You can use either red or green, I use both. Mix chicken, grapes, add 1 cup chopped walnuts in large bowl. Add a little more salt and pepper. Add mayo to cover, mix well. Best if you let it cool for about 1 hour.
