Rosairo Dawon Salad (Cheryl's Pe-Pe Salad)
Matt gave this salad the Rosario Dawson salad, Cheryl calls it PePe Salad. Whatever you want to call it, it is delicious.
ingredients
- 1 pound box of Ande Pep Pasta #37
- 2 very large cans fruit cocktail, drained and save juice
- 1 tall can crushed pineapple, drained and save juice
- 2 tall cans manderin oranges, drained (do not save the juice)
- 2 eggs, beaten
- 2 tbs. cornstarch
- 1 tsp. salt
- 1 cup sugar
- juice from fruit
- 1 very large container of Cool Whip

Cook macaroni ad directed, drain and cool
- 2
Blend cornstarch, salt and sugar, add eggs and juice. Cook in medium saucepan over medium heat until thickened. Cool. Combine macaroni and cooked mixture. Place drained fruit on top, (DO NOT MIX IN), cover and refrigerate overnight.

The next day, add the cool whip and blend well. Can top off with additional cherries. You can use green ones during the holidays, it makes it look very festive!!
