Mum's rice salad
ingredients
- 2 cups cooked brown rice
- 8 spring onions, finely chopped
- 1 red capsicum, diced
- 3/4 cup currants
- 1/2 packet roasted cashews
- 2 Tbsp sunflower seeds
- 2 Tbsp parsley
- Dressing
- 3/4 cup sunflower oil
- 2-3 Tbsp soy sauce
- 2 Tbsp lemon juice
- 1 clove garlic, crushed

Mix rice, spring onions, capsicum, currants, cashews, sunflower seeds and parsley together.

Shake all dressing ingredients together in a jar. Add and gently stir through just before serving.
notes
All salad ingredients can be mixed together a few hours prior to serving other than cashews. Add cashews and dressing at last minute.
