Oatmeal Cake

ingredients

Cake
  • 1 1/2 c. water
  • 1 c. quick oats
  • 1 c. brown sugar
  • 1 c. sugar
  • 1/2 c. shortening
  • 2 eggs, beaten
  • 1 t. soda
  • 1/2 t. salt
  • 1 t. cinnamon
  • 1/4 t. nutmeg
  • 1/4 t. allspice
  • 1 1/2 c. flour
Topping
  • 1/2 c. melted margarine or butter
  • 1/2 c. brown sugar
  • 1/4 c. cream
  • 1 c. chopped nuts (walnuts or pecans)
  • 1 c. coconut
  • 1 t. vanilla

    Bring water to a boil and pour over the quick oats and let stand for 10 minutes.

    Cream sugar and shortening. Add beaten eggs and mix well. Sift dry ingredients together, and add alternately with the oat mixture. Bake in a 9 x 13 inch pan for 35 minutes at 375°.

Mix the topping ingredients and spread on cake as soon as you take it out of the oven. Put under broiler until the coconut is browned. Watch carefully, it burns easily.
