Ken likes the Almond flavor but family doesn’t so leaves the almond out when he is making it for one of their birthdays

ingredients

  • Crust
  • 1/2 (9oz) pkg chocolate wafer cookies, crushed (about 1 cup
  • 1/4 c. butter or margarine, melted
  • 1/4 c. finely chopped almonds
  • 3 Tbsp. packed brown sugar
  • Cheesecake
  • 3 pkg (8 oz each) cream cheese softened
  • 3/4 c. packed brown sugar
  • 3 eggs
  • 3 Tbsp. milk
  • 1/2 tsp. almond extract
  • 1 1/2 c semi-sweet chocolate chips, melted
  • 1 c. thawed frozen whipped topping

directions

Preheat oven to 325 degrees for crust, combine all ingredients in small bowl, press onto bottom of 10 inch spring form pan fitted with flat bottom. Bake 10 minutes. For cheesecake beat cream cheese in large mixing bowl at medium speed of electric mixer until creamy. Beat in sugar. Blend in eggs, milk and almond extract. Mix in chocolate. Pour batter over crust. Bake 36-40 minutes or until center is set. Loosen cake from rim of pan. Cool completely. Cover; refrigerate until completely chilled., 3-4 hours. Remove rim. Decorate by piping whipped topping around edge of cake.
