Cherry Cottage Pudding

ingredients

  • 1 1/2 cups flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1 egg, well beaten
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 16 ounce can cherries and juice
  • 1 tablespoon corn starch

    Preheat oven to 400 degrees. Sift flour, baking powder, salt and sugar into a medium bowl. In separate bowl mix together beaten egg, milk and butter. Add to flour mixture and stir to combine. Pour into 8 x 8 inch baking dish sprayed with coking spray.

    Mix the cherries plus juice with cornstarch in a saucepan. Heat until slightly thickened and clear. Pour over top of cake batter. Bake for 20-25 minutes.
