Greek Farmer's Salad
Dressing:
Whisk together oil, lemon juice, vinegar, garlic, ¼ teaspoon salt and a generous grinding of pepper.
Cut tomatoes and cucumbers into bite sized pieces. Place in salad bowl and add onion. Add fresh oregano.
Toss with dressing, adding more salt and pepper to taste. Scatter feta and olives on top; toss gently before serving.

You may add or subtract ingredients to suit your taste. Also a good bought Greek salad dressing can be used in lieu of making your own. Best if it sets a while before serving.
