- 1 cup medium-ground or coarse cornmeal, preferably organic stone-ground
- 4 cups water
- 1 teaspoon salt
- 3 tablespoons olive oil
- 1 clove garlic
- 1/4 teaspoon crushed red chile flakes
- Freshly-ground black pepper
- 1 lb. mixed tender greens, such as spinach, arugula, watercress, or kale, coarsely chopped
- 1/3 cup grated Pecorino Romano cheese
