Balsamic Mashed Sweet Potatoes

Preparation time 10 minutes Baking Time 50 minutes Cooking time 3 minutes Makes 7 cups (6-8 servings)
Make ahead: Mashed sweet potatoes can be made up to 3 days in advance, covered and refrigerated. Do not freeze. To reheat, place in a large saucepan, cover and heat over medium-low, stirring occasionally. You may need to add more milk.

  • 5 large sweet potatoes
  • 1 cup milk
  • 2 tablespoons butter
  • pinches of ground nutmeg or cinnamon, salt and freshly ground black pepper
  • 1 to 2 tablespoons balsamic vinegar
