Tabouli
Otherwise known as parsley salad.
ingredients
- 1 c. quinoa, cooked
- 1 1/2 c. tomatoes, diced
- 1 small cucumber, diced
- 2-3 green onions, sliced
- 1 small red onion, chopped
- 1 bunch parsley, chopped
- 1/4 c. lemon juice
- 1/4 c. extra-virgin olive oil
- 3-4 cloves garlic, minced
- salt and pepper to taste

Let quinoa cool completely.

Mix in vegetables.

In a small bowl, whisk together lemon juice, olive oil, garlic and salt and pepper.

Pour dressing over salad and toss.

Serve with hummus and pita bread.
