Okay, this is the basic recipe for sushi. But get creative. Try anything you like, smoked salmon, shrimp, scallions, caviar, carrot. Whatever you can think of.
Nori seaweed
Prepared sushi rice
Imitation Crab meat, cut in pieces
Avocado, peeled and cut in fine pieces
Cucumber, peeled, seeded and cut in fine strips
Sesame seeds, toasted
Place saran wrap (I really like press ’n seal) on bamboo mat, then place a nori sheet on saran wrap.
Using a wooden paddle spread a thin layer of sushi rice over the seaweed, do not cover completely. Leave a 1-inch margin at the end uncovered to seal the roll.
Lay crab meat, avocado and cucumber lengthwise. Sprinkle with sesame seeds.
To roll; slowly fold the end of the mat closest to you over the filling and tuck it in (not the side with uncovered margin). Use medium pressure to create a compact tube. Remove the mat and saran wrap as you roll. When you come to the end lightly moisten the open margin with water and seal roll. Remove the bamboo map, but leave the saran wrap to wrap the roll. Press in the loose ends and place it on a cutting board, seam side down. With the saran wrap still in place use a wet, sharp knife, to slice the roll in half then into 6 equal pieces. Lift up the saran wrap and you have 6 perfect pieces.
