ingredients

For the sauce:

  • 1 whole jalapeƱo pepper, stem removed
  • 1 pound fresh tomatillos, husks removed
  • 12 ounces (about 2 medium) tomatoes, stems removed
  • 1 tablespoon vegetable oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried marjoram
  • Salt and freshly ground black pepper
For assembly:
  • 8 six-inch corn tortillas
  • 1/2 pound thinly sliced or shredded Monterey Jack cheese
  • 2 tablespoons butter
  • 8 large eggs
  • 6 tablespoons chopped cilantro
  • 1/2 cup finely diced white onion
  • 3 tablespoons grated cotija or Parmesan cheese.
