Mexican Tortilla Casserole

ingredients

  • 1 tbsp. olive oil
  • 1 clove minced garlic
  • 1 medium onion, diced
  • 3/4 lb. sautéed ground beef or 2-3 cups cooked shredded chicken
  • 2 cans Rotel diced tomatoes(any style - according to taste)
  • 1 small can sliced black olives
  • 4-5 corn tortillas, cut in strips
  • Package of shredded Mexican cheese (amount depends on individual taste)
  • Sour cream and chopped cilantro to garnish
  • Salt and pepper to taste
