Mexican Tortilla Casserole
ingredients
- 1 tbsp. olive oil
- 1 clove minced garlic
- 1 medium onion, diced
- 3/4 lb. sautéed ground beef or 2-3 cups cooked shredded chicken
- 2 cans Rotel diced tomatoes(any style - according to taste)
- 1 small can sliced black olives
- 4-5 corn tortillas, cut in strips
- Package of shredded Mexican cheese (amount depends on individual taste)
- Sour cream and chopped cilantro to garnish
- Salt and pepper to taste
