James Beard’s Chocolate Roulade

- 1/2 cup + 2 Tblsp. granulated sugar
- 6 ounces semisweet chocolate
- 3 Tbls. Strong coffee
- 1 tsps. vanilla extract
- 1 1/2 cups heavy cream, chilled
- Salt
- Unsweetened cocoa powder and powdered sugar for garnish
