Apple Budino

Cubed croissants make this a novel take on bread pudding. It is lighter tasting and less custardy than traditional versions, with a pleasant crunch on top, and goes well with ice cream. This is an easy way to bring together classic apple pie flavors and is a great use of leftover croissants.

ingredients

  • 1/2 tbsp unsalted butter
  • 1 large Granny Smith apple, peeled and cut into 1/4-inch dice
  • 1 (3-inch) cinnamon stick, broken into thirds
  • 2 tbsp packed light brown sugar
  • 1/2 cup apple juice
  • 3 croissants, cut into 1/2-inch cubes
  • 1 cup heavy cream
  • 2 large eggs
  • 1/4 cup plus1 tbsp granulated sugar
  • accompaniment: cinnamon or vanilla ice cream
