Apple Budino
Cubed croissants make this a novel take on bread pudding. It is lighter tasting and less custardy than traditional versions, with a pleasant crunch on top, and goes well with ice cream. This is an easy way to bring together classic apple pie flavors and is a great use of leftover croissants.
ingredients
- 1/2 tbsp unsalted butter
- 1 large Granny Smith apple, peeled and cut into 1/4-inch dice
- 1 (3-inch) cinnamon stick, broken into thirds
- 2 tbsp packed light brown sugar
- 1/2 cup apple juice
- 3 croissants, cut into 1/2-inch cubes
- 1 cup heavy cream
- 2 large eggs
- 1/4 cup plus1 tbsp granulated sugar
