The flavors of this pie are deeper than most pumpkin pies. Fresh ginger provides a bright, lively zing.

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/8 teaspoon salt
  • 7 tablespoons unsalted butter, chilled, cut up
  • 2 teaspoons grated fresh ginger
  • 2 to 3 tablespoons water
  • FILLING
  • 1 (15-oz.) can pure pumpkin
  • 1 cup whipping cream
  • 1 cup packed light brown sugar
  • 3 eggs
  • 1 1/2 tablespoons grated fresh ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • CREAM AND GARNISH
  • 1 1/2 cups whipping cream
  • 1 tablespoon sugar
  • 1/8 teaspoon ground ginger
  • 1/3 cup minced crystallized ginger
