clam 'n' corn chowder
There is no “right” way to make this chowder and the recipe changes often but here is the basic formula. The original recipe was a classic corn chowder with lots of bacon that was modified with clams to suit the taste of a semi-vegetarian girlfriend.
ingredients
- 1 med. onion, chopped
- 2-3 stalks celery, chopped
- 3 lbs. potatoes, peeled and cubed
- 2 c. corn (creamed or frozen)
- 2 bay leaves
- 1+ qt. milk, enough milk to cover the potatoes
- 4 cans chopped clams
- 4 tbsp. butter
- salt and pepper to taste

Sauté onion and celery with 2 tbsp. butter until soft.

Add potatoes, milk, and bay leaves, cook for 10 min.

Add corn and cook for 10 min. more.

Add clams along with their juice, and cook for a final 10 min., whisk in remaining butter, season to taste.
