Chili Rellenos

The grand kids Drew, Devann, Ryan, & Sean

  • 8 whole green chili peppers from the can

  • ¼ cup flour

  • 8 slices jack cheese

  • 4 eggs separated

  • 1 teaspoon salt

  • oil for frying

  • Stuff each chili with a slice of jack cheese. Just before serving time, roll each chili in flour to coat. Pat of excess. Set aside. Beat egg whites with salt till they hold firm peaks. Using the same beater beat yolks until thick. Fold yolks into whites then fold in ¼ cup of flour. Heat about ½ inch of oil in a frying pan. Coat rellenos with egg mixture and fry until light brown on both sides
