Warm Potato Salad

ingredients

  • 2 lbs new or russet potatoes, scrubbed or peeled and chunked small
  • 1/4 cup dry white wine
  • 1/2 small red onion, diced
  • 1/4 cup parsley, minced
  • salt and pepper to taste
  • 3 oz goat cheese
  • 2T red wine vinegar
  • 1 tsp dijon mustard
  • 1/4 cup olive oil
  • 2T sage leaves, slivered or chopped

directions

    Boil potatoes until tender. Meanwhile, combine wine, onion, parsley and salt and pepper in large bowl. Remove potatoes from heat and add to bowl while still warm. Stir in goat cheese.

    Mix together vinegar, mustard and olive oil. Toss with salad. Just before serving, add sage and taste for seasonings. Serve warm or at room temperature.

I use less red onion than called for.
