Broccoli and Mushroom Soup
ingredients
- 1T vegetable oil
- 2T grated ginger
- 2 cloves garlic, minced
- 1 lb. head broccoli, stalks peeled and sliced, florets chopped small
- 4 cups chicken broth
- 1 cup water
- 1 package sliced mushrooms
- 1T soy sauce
- 1 tsp sesame oil
directions
Heat oil. Add garlic and ginger and stir. Heat until fragrant over med heat. Add broccoli stalks and cook for 1-5 minutes. Add broth and water; simmer 5 minutes. Add broccoli florets and mushrooms; cook 3 minutes. Add soy sauce and sesame oil.
notes
Don't use all the stalks. Can add more soy sauce/sesame oil to taste.
