Katherine's Fruit Salad
Served at Girl’s Week-end
ingredients
- 1/4 cup unsweetened coconut, toasted
- 1/3 cup roasted salted pistachios, coarsely chopped
- 1/4 cup lime juice
- 1 tablespoon minced candied ginger (I think I left this up there)
- 1 tablespoon minced mint
- 1.2 teaspoon red pepper
- kosher salt and fresh pepper
- 1/2 honeydew melon
- 1/2 large cantaloupe
- 1 mango

In blender puree lime juice, ginger, mint and red pepper. Season with

salt and pepper. Toss with fruit, just before serving sprinkle with
- 3
coconut and pistachios.
