Hannah's "Confetti" Corn Salad
Another party hit. This salad is simple, beautiful, and refreshing. You can make it a day or so in advance - it keeps really well, and is actually better after the ingredients get a chance to marinate.
ingredients
- 4 cans of corn, drained
- 2 tomatoes, chopped
- 2 avocados, chopped and tossed with lime juice
- 1/2 red onion, minced
- 1/4 cup lime juice (1-2 limes)
- 1/2 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/4 cup chopped cilantro
directions

1. Whisk lime juice, olive oil, salt, and pepper together in a small bowl.

2. In a separate, larger bowl mix together corn, tomatoes, avocado, and red onion.

3. Pour dressing over vegetables and toss. Add cilantro and mix again, reserving a small amount for garnish.

4. Put into serving dish and garnish with remaining cilantro.

This is a great side dish for a summer barbecue.
