Broccoli Salad
A super tasty salad you think should be healthy because of the broccoli...but really, it just isn’t. But if it was, it wouldn’t be any fun!
ingredients
- 2 heads of broccoli
- 3/4 cup shredded cheddar cheese
- 1 red onion chopped
- 1/2 cup raisins
- 1/4 cup toasted pinenuts
- dressing:
- 1/4 cup red wine vinegar
- 1/8 cup white sugar
- 2 tsp black pepper
- 1 tsp salt
- 2/3 cup mayonnaise
- 1 tsp lemon juice

1. Go to the garden and cut off two fresh heads of broccoli (but if you are not lucky enough to live at a house with a garden and live in gardener, then just go to the local grocer).

2. Chop up the broccoli into small bite-sized pieces, leaving very little stem.

3. Mix the dressing ingredients together; place raisins in a bowl of boiling water to plump up and get juicy; place pinenuts on a tray and toast til slightly browned.

4. Chop the onion and combine with dressing, raisins and pinenuts. Add salt and pepper to taste.

5. Combine the mixture with the broccoli and mix well.

6. Eat up, and just try not to eat it all in one go...
notes
* can substitute balsamic vinegar for red wine vinegar
