Flank Steak Pinwheels
This is a very colorful dish that tastes great.
ingredients
- 4 flank or thin cut steak
- 1 (6 oz.) cube feta cheese, sliced into 1/4" slices
- 3 roasted red peppers, cut into thin strips
- 1/2 c. red onion, sliced thin
- 1 c. fresh spinach
- steak seasoning
- tooth picks

Preheat grill.

Lay steaks out flat. Layer feta cheese, roasted red peppers, red onion, and spinach.

Roll up tightly into a pinwheel, secure with toothpicks. Cut into 2-3" pieces.

Season as desired with steak seasoning.

Grill on all sides approx. 3-4 minutes or until cooked through.

Serve with grilled pitas and tzatziki (cucumber) sauce.
