Flank Steak Pinwheels

This is a very colorful dish that tastes great.

  • 4 flank or thin cut steak

  • 1 (6 oz.) cube feta cheese, sliced into ¼" slices

  • 3 roasted red peppers, cut into thin strips

  • ½ c. red onion, sliced thin

  • 1 c. fresh spinach

  • steak seasoning

  • tooth picks

  • Preheat grill.

  • Lay steaks out flat. Layer feta cheese, roasted red peppers, red onion, and spinach.

  • Roll up tightly into a pinwheel, secure with toothpicks. Cut into 2-3" pieces.

  • Season as desired with steak seasoning.

  • Grill on all sides approx. 3-4 minutes or until cooked through.

Serve with grilled pitas and tzatziki (cucumber) sauce.
