Mom's Potato Salad
3 lbs cooked potatoes- just until tender and cubed
5 or 6 hard boiled eggs, peeled and chopped
½ cup finely diced onion
½ cup finely diced celery
¾ cup mayonnaise (Hellmans or Best Foods)
1-2 Tblsp prepared yellow mustard
salt and pepper to taste
Combine everything in a bowl and mix. (Depending on your tastes, you can use more or less mayonnaise). Cool in frig
