Cinnamon Rice Pudding with Raisins

Ingredients

  • 2 1/2 cups milk
  • 2 cups water
  • 3/4 cup long-grain white rice
  • 2 cinnamon sticks
  • 1/2 vanilla bean, split in half lengthwise
  • generous pinch of salt
  • 1/2 cup sweetened condensed milk
  • 1/3 cup yellow raisins

directions

Combine milk, water, rice, cinnamon, vanilla and salt in heavy large saucepan. Simmer mixture over very low heat until pudding is thick and rice is tender, about 45 minutes. Add sweetened condensed milk and raisins and continue to simmer, stirring occasionally until rice is very tender and pudding thickens slightly, about 20 minutes. (Pudding thickens as it cools.) Refrigerate pudding until chilled, about 4 hours. (Pudding can be made up to 2 days ahead.)
