Grilled Chicken Satays with Peanut Sauce

- 1/4 cup soy sauce
- 3 tablespoons vegetable oil
- 2 tablespoons fish sauce
- 2 teaspoons chopped fresh ginger
- 2 teaspoons chopped fresh garlic
- 1 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes
- 2 pounds boneless, skinless chicken breasts, trimmed and cut into thin strips about 3 by 1/4-inch each
- 35 to 45 medium (7-inch) bamboo skewers, soaked in water for 15 to 30 minutes

- Peanut Sauce:
- 1/2 cup chopped green onions
- 1/3 cup chopped fresh cilantro leaves
- 2 jalapeno peppers, stemmed, seeded and chopped
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger
- 1 (12-ounce) jar smooth peanut butter
- 2 tablespoons sesame oil
- 1/3 cup fish sauce (nam pla)
- 1 tablespoon fresh lime juice
- 1 (14-ounce) can coconut milk
- 2 tablespoons hoisin sauce
- Hot sauce, optional
